Chapter 11 Underrated Menu Item: Mazesoba - Soupless Ramen

One menu item that's easily overlooked is our Mazesoba. With Kuma Ramen's reopening, we're introducing the Triple Garlic Mazesoba. "Mazesoba" translates to "mixed noodles". When you think of ramen, it's usually noodles and soup with toppings. But there's beauty in Mazesoba, where we ditch the broth entirely.

Here's the deal: Fat carries flavor. By leaving out the liquid, flavors get more concentrated, giving you a more intense experience. So, if you like our soupy ramen, you should give Mazesoba a shot.

To amp up the experience, we're swapping thin noodles for thick ones. Picture this: a creamy, velvety, intense sauce coating silky smooth noodles, topped with ingredients that add layers of flavor and emphasize different textures. It's like ordering Japanese pasta but with our unique Kuma flair.

Mazesoba opens up new ramen possibilities. Back in the day, we introduced our Shiso Miso Pesto Mazesoba – a certified banger among seasonal eaters. As much as it pains me to say, it's unclear when or if we're bringing it back. Pesto's got a super short shelf life; its quality drops within hours. The vibrant, fresh flavors need to be enjoyed ASAP. It'll return, but only for our monthly supper clubs, where you can join us in chasing greater flavor.

Speaking of which, I've been toying with the idea of a Lobster Bisque with Shiso compound butter...
