Chapter 4 The New Menu
In my last posts, I hinted at what’s coming with our newly adjusted concept. But what does this mean?
Without giving too much away before our reopening, here’s what you need to know: The favorites will stay. The menu will be lean. The motto? "Keep it simple."
Ramen is inherently complex, but since our goal is "Ramen for everyone," the menu should reflect that. While the selection will be streamlined, our dedication to the craft remains unwavering. Making ramen from scratch is no small feat, and we’ll continue to uphold the highest standards. Our focus is on simplicity and approachability—creating a menu that’s clear even for first-time ramen eaters. Expect a well-structured selection, beautiful photos to guide you, and pricing that fits the vibe of Markthalle Pfefferberg.
One thing I can reveal—Tsukemen is making a comeback as our first seasonal special! Not immediately at launch (we need to find our groove first), but once we’re settled and confident in executing the core menu. I can’t wait to bring back my signature emulsion and vinegar concoction to this Japanese classic. Supper Club attendees know exactly what I’m talking about!
